Cotterall's Recipe for BBQ Steak:

Take a cut of lean sirloin, round or flank steak. Cut lines lightly across steak. Stick in a large plastic container with well-fitting lid. Mix 1/2 cup red wine with 1/4 white vinegar. Add fresh chopped cilantro and a little white onion. Leave to marinate overnight.

Take out steak and leave marinade aside. Dry off on paper towels. Season with garlic powder and salt and pepper. Heat up barbecue and leave steak out for ten minutes. Check on coals and butane frequently. Lightly brush barbecue with a little corn oil. Leave a bowl of corn oil on the side. Throw on steaks and do 3-4 minutes on each side for blue rare, 6 minutes each side for medium rare, 8 minutes on each side for medium and ten minutes or more for well-done. Do not make brise as in burnt. Baste with oil as needed. You can use barbecue sauce instead as long as it is mild and not too spicy. Heat up marinade on stovetop in the meantime or in the microwave. Thicken with cornstarch and add a little sugar and salt. Serve as a side sauce.

I like barbecued apples, onions and vegetable shish kabobs with this, as well as homemade low-fat Southern biscuits or corn thrown on to the barbecue.

Use aabout 6 oz to 10 oz steaks, one per person. The recipe above will marinate 2 large or three medium steaks. Double as needed.
