Types of Beef Steaks:





Choosing the correct cut of meat is very important when grilling. Some of the best steaks for grilling are the premium cuts. Thickness of the steak is very important. Each cut should be between 1 inch and 1 陆 inches thick. The strip steaks and top sirloin should be a little less expensive than the filet mignon, t-bone, porterhouse, and rib eye.

Filet Mignon or Tenderloin - The filet mignon is a stylish cut taken from the heart of the beef tenderloin that has outstanding taste as well as texture. They're the most tender steaks you can buy, though not the most flavorful.

















Filet Fraud - Don't be fooled!





Also known as mock tender steak, fish steak, chuck fillet steak, chuck tender steak, shoulder petit tender.





Some less-than-honorable butchers and restaurants serve and sell cheaper cuts of meat that they masquerade as expensive filet mignon.





Real filet has a very fine grain and a buttery texture with no connective tissue. The chuck tender has more marbling and noticeable connective tissues. In other words, it is tougher.























New York Strip - The New York strip is such an excellent cut for grilling, many grilling experts refer to it as the ';ultimate'; steak for cooking out.











Porterhouse - The Porterhouse is a very large steak that is actually a combination of two steaks: the New York strip on one side and a tender filet on the other. Many believe these to be the best of all steaks.





Rib Eye - Another classic cut, the rib eye has marbling throughout the meat - making it one of the juiciest cuts as well as very tender.














T-Bone - Named for its distinguishing T-shaped bone, this choice cut is almost identical to a Porterhouse steak, only it doesn't have as much of the tenderloin muscle in it. The T-bone steak is a succulent cut that is a favorite of steak fans. It is both a strip sirloin (with the bone) and a tender filet mignon.














Top Sirloin - The sirloin is near the rump, so the meat's a bit tougher than cuts from the loin or the rib. The top sirloin is a juicy cut taken from the center of the sirloin - the most tender part - and a great cut for grilling.How to cook steak?
You can pan sear it and pop it in the oven, fry it in a pan, deep fry it (my least favorite), grill it, broil it, george forman it :) There are many different ways and I choose the method depending on the cut of meat. The better quality of meats I do not season and I grille, the lesser quality of meats I cook slower and with seasoning.     we're both in college. she's coming over Saturday. my parents are going on a cruise tomorrow. i'm gonna propose next week in disney world too... but saturday, like I said, parents are gonna be gone and i want 2 make her a romantic dinner. something delicious and fairly simple. I already have a bottle of wine for us. what can i make? i know how to cook steak, but I don't know if it's romantic or not. Here's where I can shop. local grocery stores or wal-mart.     omg, you are too sweet! I think that if you both love steak, do steaks - get some nice ones, like filet mignon, (they are extremely nice with au poivre sauce - yum!) and serve them with asparagus (add some hollandaise sauce, if you like - just don't do the sauce if you're doing a sauce on the steak!) and some roasted red potatoes with dill or parsley. Starting the dinner off with a nice salad would be great, or do a shrimp cocktail appetizer. Or you could do some grilled shrimp alongside the steaks! I love the strawberries in Champagne idea - It's beautiful and romantic, too! It would be a great tie-in to chocolate covered strawberries for dessert, or you could do a chocolate decadance cake with a strawberry sauce drizzled over it.


    If you are wanting to do something different then steaks, think about shrimp scampi over linguine, or chicken florentine or piccata, or steamed lobsters, or whatever you both love. No matter what you do, she will love it, I assure you!

    How about lasagne and a green salad (there's a fairly simple recipe on the back of the box of noodles if you've never made it before; get the no boil noodles, they are easy), good bottle of red wine, nice china and tall candles on the table...Cheese and fruit for dessert (grapes, sliced apples and strawberries are good with cheeses)...Candlelight and soft music playing in the backround makes any meal romantic, I just like lasagna coz' it's Italian...
    Make a nice salad with field greens, dried cranberries, walnuts and goat cheese .. lightly dress it with a little salt and pepper and raspberry vinegar.





    Then a nice, simple seafood paella .. foodtv.com has tons of simple recipes. This is a romantic meal because you have to use your fingers and it's relaxed and fun.





    And finish off with a nice dessert .. like the chocolate and strawberries.





    Serve white sangria with the entree and champagne or a good quality port with dessert.

    Ingredients





    3 tablespoons butter, softened


    1 pound spaghetti


    salt, for pasta


    12 eggs, lightly beaten


    1 ½ cups grated parmesan cheese


    ¼ cup extra virgin olive oil


    1 garlic clove, very finely minced


    ½ cup Italian parsley, chopped


    salt and freshly ground pepper, to taste


    1 cup mozzarella cheese, shredded





    Equipment





    9” x 12” baking dish, preferably glass€





    Preparation





    Lightly grease the inside of a 9” x 12” baking dish with the butter. Preheat the oven to 350° F.





    Prepare the spaghetti according to the package directions and undercook by 2 or 3 minutes. It should be very al dente. Drain and rinse with cool water. Set aside.





    Beat the eggs lightly to combine. Stir in the grated parmesan cheese, extra virgin olive oil, finely minced garlic, parsley, salt and pepper.





    [Chef’s Note: Be sure not to add too much salt as the cheese has plenty of salt already.]





    Add the egg mixture to the spaghetti and mix until all the spaghetti is well blended with the eggs. Pour into the buttered baking dish and spread the spaghetti mixture evenly in the pan. Cover with foil and bake for 40 minutes or until the eggs are completely set. Uncover the spaghetti pie and sprinkle the shredded mozzarella cheese over the top and bake, uncovered, for another 5 minutes or until the mozzarella is melted and slightly browned. Remove from the oven and cool.





    Service





    Spaghetti pie is best served at room temperature. It can be kept in the refrigerator for up to 3 days. If longer storage is required, it can be wrapped in plastic wrap and then in foil and placed in the freezer for up to a month. Thaw and bring back to room temperature before serving.





    Variations





    Spaghetti pie is one of those delightful recipes that can be creatively adapted to individual tastes. Feel free to add your own special ingredients such as pepperoni, prosciutto, maple ham, sun dried tomatoes, blanched vegetables or other types of grated cheese. You can also substitute whole wheat or spinach spaghetti, or even linguine or fettucine.

    2 (8 ounce) beef sirloin steaks


    1 tablespoon butter


    1/4 cup brandy


    1 onion, minced


    1 clove garlic, minced


    1/2 cup red wine


    2 tablespoons steak sauce


    1 dash Worcestershire sauce


    salt and pepper to taste


    1/2 (4 ounce) package button mushrooms, sliced


    1/2 cup Dijon mustard, divided


    1 cup heavy cream


    DIRECTIONS


    Place the steaks between two sheets of plastic wrap; pound with a kitchen mallet to tenderize.


    Melt the butter in a skillet over medium-high heat, and heat until it begins to smoke. Cook the steaks for 1 to 2 minutes on each side until they have browned. Pour brandy over steaks and carefully ignite. Once the flames burn off, remove steaks from the pan and set aside.


    Cook the onion and garlic in the same skillet over medium heat until they soften. Stir in the red wine, steak sauce, Worcestershire sauce, salt, and pepper; mix well. Mix in the mushrooms, stir, and cook for about 5 minutes.


    Meanwhile, coat one side of each of the steaks with 2 tablespoons of the Dijon mustard. Gently lay them on top of the sauce in the skillet, mustard-side down. Spread 2 tablespoons on top of the steaks. Cook 2 to 3 minutes per side. Remove the steaks from the sauce, and keep warm.


    Stir the cream in to the mushroom sauce and bring to a gentle simmer. Reduce heat to medium-low, return the steaks to the sauce, and simmer for 5 minutes. Serve with rice or baked potato.


    Have a nice vegetable like Steamed asaparagus with butter and lemon.

    SIMPLE CHOCOLATE MOUSSE


    Since the chocolate is the only flavour giving ingredient in this recipe, it is most important to use first class dark chocolate with a good, deep chocolate flavour.





    100 g bittersweet chocolate with high cocoa content (min. 50 %)


    1 egg


    100 - 150 ml cream


    Chop the chocolate and put in a bowl. Place the bowl in a barely simmering water bath but do not let its bottom touch the water. Let the chocolate melt.





    Remove the bowl from the water bath, stir the chocolate smooth and let it cool for about 10 minutes in room temperature. Meanwhile, whip the cream until stiff.





    Check the temperature of the cooled chocolate with your finger — it should feel just faintly warm. Brake in the egg and mix gently but firmly with a balloon whisk until smooth. The egg will thicken the mixture.





    Using the balloon whisk, mix in about 1/3 of the whipped cream and stir firmly and thoroughly until smooth. Then fold in the rest of the cream, stirring gently with the whisk. Pour the mixture into serving dishes, cover tightly with plastic and place in refrigerator to set for at least 30 minutes before serving.


    Serves 2 to 4.

Then put the steak inside. A one inch thick steak should be fried 3 minutes from each side to be medium upon completion.     The best options are a local butcher or gourmet market. Ribeye and ny strip(shell) steaks are the best for the money. You can pay anywhere from $6-$28 a lb depending on the grade and location

    Joshua- Steaks are generally cooked over a med-high burner in a pan...or over a grill.


    By slow cooking a steak, it will go through some changes...starting by getting tough...then the longer it simmers, the more tender it gets. What you will end up with is something like a pot roast. (not all bad) but it doesn't resemble a steak anymore. Use some water and a lid to keep it moist and allow a liquid that you can use for gravy. I slow cook beef for 4-6 hrs if I'm at work. Good luck!

    My first advice is do not. Micros cook from the inside out, so you would not be able to have a ';rare to medium'; steak.

    wait a minute, i used to be head chef at Red Lobster and we cooked steaks in the microwave all the time, thing is that is does have to be cooked over a stove a little bit first, then to turn a really rare steak into a slitghtly rare steak throw it in for a min or so. we used to get tips on those steaks the most!!

    2 teaspoons garlic herb seasoning


    1 teaspoon chili powder

    Take the steaks out of the refrigerator and season both sides well with kosher salt





    Heat oven to 375





    Heat an oven proof skillet over high heat for 2 minutes. Add 1 tablespoon of canola, safflower, grapeseed or peanut oil and heat for 1 minute.





    Add the steaks and set a timer for 4 minutes. Turn the steaks over and set a timer for 3 minutes.





    Move the skillet with the steaks to the hot oven and roast 5 minutes for rare, 7 minutes for medium rare and 9 minutes for medium





    Use a pot holder to remove the skillet from the oven. Remove the steaks to a clean plate and top with a pat of butter or some crumbled blue cheese. Tent loosely with foil for 4 minutes before slicing and serving. Pass the pepper mill at the table.

    Take the steaks out of the refrigerator and season both sides well with kosher salt.





    Heat the grill to medium-high. Oil a paper towel and using tongs, run the oiled towel across the grill grate.





    Place the steaks on the grill angled at the 10:00 position and cook for 2 minutes. Turn the steaks to the 2:00 position and grill another 2 minutes. Flip the steaks over (admire your perfect grill marks) and grill for 3 more minutes for rare, 5 more minutes for medium-rare, and 7 more minutes for medium.





    Remove the steaks to a clean plate and top each with a tablespoon of butter, tent loosely with foil and let rest 5 minutes.

    Season the meat with salt and pepper. The very most you should put on it is a Montreal type steak seasoning. I like to stick mine back in the fridge for a bit.





    Then remove from the fridge about 30 min before you cook it. YES, it is safe. This allows the meat to come to room temp so you don't shock the meat as much when you put it on the hot surface. Shocking the meat to much may make it tough.





    From here you have a couple of options:





    1. Heat a skillet up good and hot then add some fat. Oil, butter (is okay), or even bacon fat. Put the steak down and do not touch it. The meat is pretty cool. It will release from the pan when it has a nice golden brown color to it. Then flip. Brown it up on the second and side and reduce the heat if you want it cooked further.





    2. Brown on both sides as stated above but then slide into the broiler if you skillet if oven safe use that, if not then put it in a broiler pan. And finish under the broiler.





    3. Grill over a medium-ish hot indirect heat.





    Remember a few more tips:





    1. NEVER overcook a steak. Anything over medium is over cooking your steak and even medium is pushing the limits a bit. A weel done steak is a ruined steak and you may as well just toss your money in the trash.





    2. Let the steak rest so that the stea will still be juicy from the first bite to the last bite.





    3. Don't forget about carry over cooking, as the steak rests. Due to residual heat in the meatthe steak will cook a bit more as it rests.





    I know that someone will say that you shouldn;t add salt before cooking bacuase it will dry it out. That is not true. I have always salted my steak and roasts before cooking and never had anything dry. Adding salt before cooking does Not dry it out but rather gives good flavor.

    Assumptions - steak is at room temp, not cold, proper thickness (1';) and oven with top broiler.





    Preheat oven to 450F with iron pan in it.


    Salt steak but no pepper. No - cooking it salted does not toughen it.


    Turn on broiler.


    Broil 5 min per side, highest rack level.


    Pepper after it comes out.
    Depending on mood, sometimes I season steak w Italian dressing, or, olive oil and balsamic, or, olive oil, oregano and salt.





    For well done, do about 5 min per side - otherwise, about 3. Broil is the best method.
    You can pan fry, broil, bake, boil, grill whatever you want to do with it.





    I usually cut into serving size pieces about the size of bread slice, dredge in seasoned flour and fry in butter over medium heat.
    No more than 2 minutes on each side to seal in the flavor and then indirect low heat for 5 minutes and it will be perfect. Rare is the best way to eat it.
    Throw it on the BBQ! (but don't actually throw it)

    First of all, make sure that you sprinkle some meat tenderizer (this comes seasoned or non-seasoned). McCormick makes some really good ';GrillMates'; seasonings, I especially recommend the ';Kansas City'; Steak seasoning, but don't overdo it. Pound the steak down with a tenderizer if you have one, and if you don't, beat on it with something that's easy to clean afterward. Then throw them on the grill for about 20 minutes (depending on your preference (well done, medium etc.) That's the absolute best way to get good flavor in your steak. If you don't have a grill, try using the broiler pan in the regular oven and use high heat for a short time(450+).





    For a side, I'd go with mashed redskin potatoes. These are easy because you leave the skins right on. Mash gently with butter, garlic, milk and a little sour cream.





    Steaks are best with red wines. If you want to have a sweet dessert wine, go with a cherry (Michigan cherry wines are the best), these are very afordable and great with everything! If you prefer a more dry wine then I'd suggest a cabernet sauvignon, but if you go this route you should pick one that is at least $11.00 a bottle...if you skimp on dry wines, you will regret it.

    Cook your steaks on a very hot grill. Place the steaks on the grill at an angle and close lid. Allow to cook for 4 minutes then rotate steak 45 degrees (will make nice grill marks on meat). Flip steaks after 3 minutes and grill for another 4-5 minutes. Depending on the thickness of the steaks (average 1 inch) this should cook them to medium rare. Good sides to serve with steaks..... grilled or steamed asparagus, rosemary and garlic roasted redskin potatoes with parsley, spring greens salad with dried cranberries, goat cheese and raspberry vinegarette. Choose a deep red wine for this meal -- an Australian Merlot would be a good choice. Serve a light, fruity sorbet for dessert. Enjoy!!
    I like to marinade them in Italian dressing overnight or at least for three to four hours.I season them well and put them in a plastic container with a lid.Then when I am ready to broil them I

    OVEN COOKED SMOTHERED STEAK





    2 lbs. round steak


    1 c. flour


    1 onion, sliced


    1 c. cooking oil


    1 can cream of mushroom soup


    Seasoning salt, salt, and pepper to taste





    Cut steak into serving pieces. Coat with flour, seasoning salt, and black pepper. Brown on both sides. Place in baking dish, pouring mushroom soup on top, then top with sliced onions. Drain excess oil from skillet in which steak was browned. Make roux with flour and seasoning salt; brown. Add water; do not boil. Pour over steak and cover with foil. Cook in 400 degree oven for 1 hour.








    How to Cook Steak








    Steak, though a grill favorite, can be cooked in several other ways. They can be pan-fried, braised, broiled, baked, etc. Selecting the proper method for cooking steak depends on its tenderness. There are dry heat methods and moist methods. Dry heat methods are generally applied for more tender steaks such as filet mignon and sirloin, while moist heat methods are more suited to tougher cuts of beef. The water helps in tenderizing the steak.





    The tenderness of cooked steak is influenced by how much it is 鈥榙one鈥? Depending on the time for which the steak is cooked, it may be raw, very rare, rare, medium rare, medium, medium well-done and well-done. Rare steaks are exposed to the flame for a very short time. They still maintain their rawness and are very pink in color. Rarely done steaks maintain their original beefy flavors, but they are not very healthy as they still contain microorganisms.     Another method for tough cuts is stewing. Beef is completely covered in water and cooked slowly over a medium flame. Stewing is not a very popular method for steaks; but if the cut is large enough and tough, then it better be put into the stew pot.





    In all the methods of cooking steak, the degree of doneness is measured by using a meat thermometer. However, by practice, one can also judge the doneness by merely touching the steak externally.

    Tenderloin Steaks With Creamy Sauce








    INGREDIENTS:


    1 tablespoon olive oil


    2 beef tenderloin steaks, 4 to 6 ounces each


    salt


    pepper


    3 tablespoons bourbon or good quality brandy


    2 small cloves garlic, minced


    1 teaspoon assorted multicolored peppercorns, crushed


    1/4 teaspoon dried leaf oregano


    1/4 teaspoon dried leaf basil


    1/8 teaspoon salt


    2/3 cup whipping cream


    1 1/2 tablespoons sour cream


    hot cooked rice or baked potatoes


    fresh chopped parsley, optional


    PREPARATION:


    Heat olive oil in a medium skillet over high heat until hot. Sprinkle tenderloin steaks with salt and pepper. Sear tenderloin steaks on both sides in skillet. Remove from skillet, and place on a rack in a broiler pan.





    Broil 4 to 5 inches from heat (leave door just a bit ajar) 4 to 6 minutes on each side or until meat thermometer registers 140掳 for rare or 150掳 for medium rare (160掳 for medium).


    Add bourbon to drippings in skillet; bring to a boil over medium heat, and deglaze pan, scraping browned bits that cling to bottom. Add minced garlic, peppercorns, basil, oregano, and salt; cook 1 minute. Add whipping cream; bring to a boil, and cook 6 to 7 minutes or until sauce is reduced by half. Remove from heat; Whisk in sour cream, and spoon sauce over steaks. Serve with rice or baked potatoes. Garnish with chopped fresh parsley, if desired.


    Yield: 2 servings.
    Season with a sprinkle of garlic, then throw them on a charcoal grill for about 20 minutes. Serve with tossed salad, baked potato, and fresh crusty bread. Don't know about wines--sorry.
    My girl marinates meat in Kikkoman teriyaki sauce and thinly sliced garlic. She usually uses 5 lb tri tip and chucks it in the oven about an hour and 15 minutes, it's really, really good. If you're having a romantic dinner, you might not wanna smell like garlic tho, so you can throw some pineapple in there instead. That woud be good with some King's Hawaiian bread and some salad and steamed veggies. People generally have red wines with beef, but with a meal like this a tropical drink like a mai tai would be nice.
    I like to add a little garlic salt, some pepper, a pinch of parsley and then I cook then until they are medium well(I little bit pink in the center)





    You should let them sit for 15 minutes before cutting them to keep the juices in.








    A great steak seasoning you can buy would be ';montreal steak seasoning'; made by McCormick. I recomend you try it sometime. It has alot of pepper in it though so some people won't like it.

    The best way is on a grill but short of that - rub some fresh crushed garlic and olive oil on it then pan fry on just below high til it sears then turn over sear then turn down heat to above med until rare, medium rare, medium or killed(well) - your choice.
    All is I know is make sure to marinate it for atleast 30 min ahead of time before cooking to ensure its tender and flavorful!
    Cabernet Sauvignon is always good with red meat.
    The best way to fix a steak is with a little seasoning salt and broil it in the oven BUT do not put the broiling pan as high in the oven as they normally say. I always put it at least one notch and sometimes even two notches lower than called for. I find if you broil it slowly it comes out better. You will have to watch it closely but the end results are worth it.


    As for sides, I would suggest a nice simple tossed salad, baked potatoes (seeing you are going to have the oven going already. Remember to back them first before you broil the steaks), and what ever kind of vegetable he likes.


    As to the wine, I have no idea. I don't drink because of health problems and so know nothing about alcohol.

    I'm going to attempt to make dinner for my bf and I...he's def. a steak and potatoe kind of guy...the only problem is: is that I have no idea how to cook!     Well I think it's wonderful you want to attempt this for your BF. Cooking a steak is fairly easy, although since you don't have a grill I would highly recommend you go purchase a cast iron skillet if you don't already have one. Best way in my mind to do a steak indoors.


    First the type of steak...The more flavorful is a Boneless Ribeye steak, and also very tender, hard to make one tough.


    You can also do sirloin, but if you can afford it, do the Ribeye.


    Now in skillet on stove you want to get it rather hot before adding steak. Season steak with some sal and pepper, and maybe granulated garlic on both sides and brush with some oil oil. Place Ribeye in skillet and cook o first side about 3-4 minutes. Searing a steak refers to heating it up on both sides so the juices don't run out. You only want to flip the steak once. so don't rush it. about 3 - 4 minutes per side will give you a good medium rare.


    For the mashed potatoes I woul recommend garlic mashed potatoes which can't be beat.


    Start with about 3 lbs of whole potatoes ( I prefer the Yukon Golds, they are creamier and better for mashing)


    Rinse and clean te outsides completely. Then cut into quarters. Get a large pot of water boiling on the stove just over half full. Then addyour quartered potatoes and let boil. (will take about 8-10 minutes depending upon size of potato chuncks) While potatoes are boiling melt a stick of btter ito a sauce pan, add 2-3 tablespoons of mince garlic ( if you don't want to mess with mincing fresh ones, they do sell already minced garlic packed in oil in most produce departments) let simmer (not boil) for about 10 minutes to allow garlic to infuse with butter. Once potatoes are done (take one out of the water and make sure it is soft all the way through) and dump into strainer and rince with warm water to remove starch. Place back into boiling pot and add melted butter with garlic, and about 2 cups of sour cream then either use electric hand mixer, or potato masher to mix and break down potatoes. Add some salt and pepper to taste and seve next to your beautiful ribeye steak. Good luck, I am sure whatever you do for him he will enjoy it.How to cook steak?!?

    ok, buy a good cut of steak - that's half the rent like a striploin is nice to make, or t-bone (which is striploin plus tenderloin), a tenderloin alone is the most expensive, but has not much flavour, so go for strip or t-bone.


    second: searing is ';to fry/grill the meat very hot, very quick to close the sides so the juices are contained in the meat';


    you can make your steak in the pan. i'd say put a little oil in and heat the oil until it's very hot but not smoking, put your steak in and leave it for about 1.5 min. to sear one side, then the next. NOW cooking the steak to the right doneness depends on the thickness of course, i'd say if you have a steak about an inch thick, you leave it for 3 min each side. you can check the doneness with a thermometer, 120 deg. F is rare, 140 med, over than throw it out and start again. you can also check by pressing. there's a trick to find out what it feels like.


    press the skin between your thumb and indexfinger on the side of your hand when your hand is relaxed, that's the feel of raw, bring your thumb and indexfinger together and press, that's medium, make a fist and press that's well.


    here's another really important thing, you must let the meat rest for 5 mins after cooking, that will redistribute the juices inside and the meat will be more tender.


    re: potatoes, i think a baked potate w/sourcreme and chives would be nicer than mashed, but if you want mashed, peel, cut in equal pieces and boil potatoes in saltwater (little salt) until you can easily poke them with a knife, drain, and mash with butter or margarine and milk until there are no lumps. add some salt, maybe also a little garlic and herbs. and you should be good to go! have fun and don't overcook the steak!!!! (it will cook a little more while resting)

    i'd say cook a filet but you can ask the person at the meat department what is good. if you have a pan instead of a pot, that would be so much easier for you to cook...believe me...there is one recipe for steak i LOVE and its super easy...buy McCormick Montreal steak seasoning and some dark brown sugar and add 3/4 cup dark brown sugar to


    5 tablespoons of the grill seasoning. then just heat your pan on high, coat the steaks on all sides with the seasoning blend, lightly spray your pan with cooking spray and cook 10 to 16 minutes, medium rare to medium well doneness. Let it sit on a plate for 5 minutes for the juices to redistribute and serve. for the potatoes peel about 5 yukon gold potatoes and chop them into fourths. put them into a pot with boiling water and boil them until you can poke them with a fork with no resistance drain them and put into a bowl with 3 tablespoons butter and 1/4 to 1/8 cup of milk mix with a hand mixer on high until creamy. good luck!...oh and you should look at the food network when your cooking, they have really easy recipes there. ans searing just means that you are cooking the steak at a very high temperature to give the surface of the steak a caramelized crust..its actually really good

    I highly recommend Rib-eye... no bone and very tender and juicy.





    When you sear meat you put the meat into a hot pan (with a little oil) until that side is nice and brown. Then flip and do it to the other side. This holds in the juices. After that, I cook on a lower heat (less than medium). I think it is juicier and more tender when you cook it slow. (I usually add just a tiny bit of water to the pan, NOT covering the bottom completely. This keeps the meat nice and moist). Cook for approx 7-10 minutes on each side, depending on the thickness.





    Potatoes:





    Peel and chop potatoes into pieces the size of an egg. Cover with water. Bring to a boil then then simmer for about 10-15 minutes depending on amount. Drain water. Mash, add a little milk, butter and salt to taste.

If you want steak and only have $5, look for flat-iron steaks, they are second only to fillet mignon in terms of tenderness, and cost a lot less, I can feed myself and two kids this type of steak for dinner @ about $2-$3 total. Only drawback is there is usually a strip of grissle right down the middle of each steak. If you are going to cut it up for tacos, you might want to get a bigger piece of beef instead of individual steaks. Then you can season to your preference, and cut it up and have leftovers. Usually when you buy larger portions of steak or beef, or buy value packs, you get a better deal. Some good advice would be to find a store with a good meat dept., and ask one of the butchers for their advice. They know what the best cuts are, what you can get on your budget, tips on cooking, new things to try, etc. A seasoning I really like for my steak is montreal steak seasoning.
    Tenderloin is best. If you can get it, Australian Kangaroo loin is realy good, when well cooked, even more tender than tenderloin.     i think you should start with a porterhouse steak for my recipe. i don't know but it looks like the steak i use, i usually just go to the store and pick by looks and don't read.





    well you need oil, onions, soy sauce, regular kitchen mushrooms, sugar (if you like, but to taste).





    cut the steak like you would fajita strips chop the onions (don't dice them, you want long skinny pieces) , cook them in the oil in a pan (add a little water if the onions look like their going to burn) , once their almost all the way cooked, lower the heat and add the soy sauce enough to cover half of the meat(low heat so it doesn't bubble and burn up too fast), bring heat back up and add the rest of the ingrediants and cook the meat through. serve over white rice or just eat it like that if you like.





    this is an easy recipe my dad tought me, still i don't know what kind of steak to use. it might be porterhouse, but to be sure the steak isn't really tender or it will be mushy the way i cook it, it has to be alittle chewy with fat since the boiling in the soy sauce will loosen it up.

    The best steaks for grilling and broiling (which is the only way to cook great steaks) are Ribeye (Delmonico), T-bone, or Porterhouse. Make sure there is a little bit of fat (marbling) in the meat because that gives it flavor.


    Season both sides with salt/pepper, Montreal steak seasoning, Emeril's Essence, or whatever seasoning you prefer.


    Place or pre-heated grill or broiler pan (550 degrees).


    Turn after 7 minutes and cook until you like it. A 1-inch thick steak cooked medium-rare is 7 minutes first side and about 5 additional minutes after turning.

    4 large flat mushrooms, sliced thickly (like a portobello)


    200 g swiss brown mushrooms, sliced


    1 teaspoon garlic powder


    40-50 g butter


    4 steak fillets (I like thick cut steaks but thin is fine too.)


    1 1/2 cups water


    1 1/2 cups milk


    1 1/2 cups quick-cooking polenta


    1 teaspoon chicken stock


    200 g mascarpone cheese


    1 cup parmesan cheese, finely grated


    100 g baby spinach leaves


    5 tablespoons balsamic vinegar


    8 tablespoons dry red wine


    1/2 teaspoon sugar


    1/2 teaspoon beef stock


    pepper


    Directions


    1Melt butter in a pan, add mushrooms and garlic, cook until mushrooms soften and are browned slightly. Add wine, balsamic vinegar, sugar and beef stock, stir to combine and add pepper to taste.


    2Meanwhile combine water, milk and chicken stock in a saucepan, bring to the boil, gradually stir in polenta. Reduce heat, stir until polenta thickens, add cheeses and stir to combine, stir in spinach. (I usually cook my steaks while making polenta and let them rest while I stir in the cheeses and spinach, but it will keep warm over a low heat stir occasionally to prevent bottom from burning.).


    3Season steaks with salt and pepper. Heat a small amount of oil in a pan and cook steaks until desired doneness. Cooking times will vary depending on the thickness of the steaks.


    4To Serve: Place a few spoonfuls of polenta on a plate top with steak and mound steak with mushrooms, drizzled with balsamic sauce
    Of course, grilling is the tastiest, I think, but, frying is good, too. I usually season with Mrs. Dash, seasoning salt, fresh ground pepper, Dale's marinade, %26amp; a few drops of liquid smoke. I also heat my skillet first to a medium heat, add a few drops of oil, %26amp; brown on both sides. I like my steaks done medium rare to medium. The hot skillet sears the juices inside. If you like yours a little more done, decrease heat some %26amp; cook a little longer.

    Depends on how well you like it done! the best way in my opinion is to do it medium rare! it has the most flavour then. A little trick to feel how well you steak is done is to hold your hand with you palm up and then move your thumb toward the tip of your other fingers in turn. your thumb against your pinky is an indication of how a steak should feel when it cooked well done, your ring finger is medium well to medium your middle finger medium and your index finger is medium rare to rare.





    I suggest that to get the most flavour cook it in a really hot pan in some butter ro ';seal it'; ie till its got a little colour then finish it off in an oven to your preferred level of cooking. This will ensure that it keeps its moisture.





    A nice option is to serve it with some peppercorn sauce but if that not up you alley try putting a blob of garlic or herd butter on top and just let it melt! Another nice way of doing it is to put a drizzle of balsamic vinegar on when you are cooking it - just adds a subtle flavour!
    If it was in the fridge - let it sit out for at least 20 minutes to ';warm'; up. This will make it not go into shock once you've put it on something hot.








    A good steak really only needs two spices - salt and pepper.








    When it is done cooking to your desired doneness - let it set out again to distribute the juices before cutting it. You should let it sit for at least 15 minutes.

    Brandy Butter:





    1 lb. butter


    2 oz. brandy


    1 tbsp. coarse ground black pepper

    1/2 oz. fresh garlic, minced


    2 tsp. Dijon mustard





    4 (4-6 oz.) steaks (sirloin or another tender cut of beef steak)


    Olive Oil





    Put all brandy butter ingredients in a food processor and process until creamy or mix in a bowl with a spoon until creamy. Heat the broiler (or barbeque grill.) Brush the steaks with olive oil and place on broiler or grill. Do not salt the steaks, as salt will make your steaks tough. Cook to desired doneness (rare, medium, and well done.) Place the steaks on a platter and let them ';rest'; for a minute or two. Serve topped with about 1 tablespoon of the brandy butter. Serves 4.





    NOTE: Place extra butter in plastic wrap and form into a roll. Twist the ends of the wrap and freeze for later use.





    APPLEBEE鈥橲 BOURBON STREET STEAK





    1/2 c. bottled steak sauce


    1/4 c. bourbon whiskey


    1 tbsp. honey


    2 tsp. prepared mustard


    4 beef rib, round, or chuck steaks (10 oz. each)





    Combine all the ingredients except the steaks in a baking dish or resealable plastic storage bag; mix well. Add the steaks; cover (or seal) and refrigerate for 2 hours, or overnight. Preheat the grill (or broiler) to medium/high heat. Grill the steaks for 12 to15 minutes (less time, if broiling), or until desired doneness, turning them over halfway through the grilling.





    SWISS STEAK





    2 lb. Round Steak, 1 inch thick


    Flour


    1 Lg. Onion


    1Green Bell Pepper


    4 Stalks Celery


    3 lg .Carrots


    1 28 oz. Can Tomatoes


    1/3 C. Catsup


    1 8 oz. Can Tomato Sauce


    2 tsp. Horseradish


    1 tbsp. Worcestershire Sauce


    Salt and Pepper to taste





    Roll meat in flour and brown in fat in skillet. Place in a large, deep baking dish. Cut onion, pepper, celery, and carrots in large pieces and add to the meat. Mix remaining ingredients and pour over the meat. Bake covered, for 2 to 2-1/2 hours at 325 F. until tender.How to cook steaks in the oven?
    broil 450 for like 10 min per side
    well if your using the oven,wrap in heavy duty foil with butter %26amp; whateverelse.preheat to 350,bake for 30 minutes. try not to use a cookie sheet %26amp; put on middle rack. i prefer nothing in with the steak while its cooking,the juice is really good.
    what i do is i put what i want on them, on each side then i put in oven and then cook at 350 till it is looking good on the one side that is any where from 20-45 min depending on how you want it, then you filp them half way and you cook on the other side i like to season with any norm spices and add soysauce it is great! it works if it isn't done like youlike keep them in a little longer, it is really up to how you want them and your oven
    The broiler is usually your best bet. Use a broiler pan if possible, since using a cookie sheet can result in the juices igniting. (Ask me how I know)


    5-6 minutes on each side, then slice into one to check how done they are.
    Broil. I would say 5-8 min a side. make sure the rack is up on the top notch and you leave the door cracked open.
    Heres what I was told but havnt done myself as we use our indoor grill alot.





    Sear the outside of steaks til just golden on both sides and still quite pink in the middle. Then broil them until the meat thermometor reaches 135 in the thickest part of the steak, Dont cut in to them to check as that will release the juices.Or if you dont have a thermometer when you see what looks like bubbles forming on the top you know its medium.     Vodka and Green Peppercorn Steak








    PG TESTED





    4 pounds strip, sirloin or T-bone steaks (3 steaks)


    2 tablespoons black pepper


    3 tablespoons basil, finely chopped


    2 tablespoons dried thyme


    3 garlic cloves, pressed or crushed and chopped


    3 teaspoons green peppercorns (pickled in brine, if possible)


    1/2 cup vodka


    2 tablespoons canola oil


    1/8 cups olive oil


    1 tablespoon salt


    1/2 cup port wine


    4 tablespoons unsalted butter





    Mix everything together except for the olive oil, salt, port and butter. Put it in a bag and leave it in the fridge for 4 hours or overnight.





    When you take steaks out, reserve the marinade and leave steaks to warm to room temperature. Preheat oven to 400 degrees. Heat your pan at medium-high heat until a drop of water skitters across the surface rather than sizzling in place. Place steaks in the pan and cook for 45 seconds, flipping them then cooking them for an additional minute.





    Place into oven and cook for 2 minutes, then turn and repeat. Take the pan from the oven, remove the steaks and set aside so they can rest.





    Return the pan to medium high heat, add olive oil, salt and reserved marinade, then scrape drippings. After the pan is scraped and the oil heated through, add port, and if necessary for consistency, water. Reduce heat and simmer until incorporated. Remove from heat and stir butter through the sauce. Serve steaks with sauce.





    Serves 3.
    Broil on High (using the center rack in the oven) Broil on one side for 10-12 minutes and turn over and broil from 6-8 on the other side. Leaving you with a 1 1/2 inch steak cooked medium rare to medium.

    a simple marinade to use, well not really a marinade, but you lay out the skirt steak and sprinkle garlic powder, salt, you said you dont want pepper, so leave that out, and squeeze lime juice on steak, cumin is also good





    This is my marinade, that should be soaked in for at least 4 hours, 2 cups orange juice, sliced onions, chopped cilantro, sliced jalapenos,garlic,black pepper, salt to taste, throw this in a zip lock bag, add meat and marinade for 4 hours, grill on gas grill! yum!

    2 cloves garlic, minced (or 1/2 tsp. dehydrated MINCED GARLIC)





    1/2 Cup chopped onion





    2 tsp. grated lime peel





    4 TB. lime juice (the juice from 2 limes)





    2 tsp. GROUND CUMIN





    1/2 tsp. CAYENNE RED PEPPER





    1/2 tsp. MEXICAN OREGANO crushed





    1 tsp. SHAKER GRIND BLACK PEPPER





    1 tsp. CILANTRO (dried or 1 TB. fresh)





    2 tsp. salt





    2 tsp. sugar





    1/4 Cup canola or corn oil





    1 Cup water


    Tacos:





    2-3 lbs. sirloin steak about 1/2 to 3/4 inch thick





    1/2 head iceberg lettuce, shredded





    2-3 tomatoes, chopped





    1 medium red onion, sliced





    2 Cups shredded cheese





    24 hard taco shells or soft flour tortillas (mix and match)





    In a medium bowl, combine marinade ingredients, mixing thoroughly with a whisk. With a sharp knife, score the steak in a diamond shaped pattern on one side. Cut about 1/2 to 3/4 of the way through the steak. This will allow the marinade to penetrate, make it easier to cut later and let you grill larger pieces. Marinade in a glass baking dish or large zip-lock bag.


    Refrigerate at least 2 hours but preferably overnight. Turn once or twice. Prepare grill for direct heat cooking method (enough coals to cover the grill bottom, but no more than two coals deep). Grill the steak 5-8 minutes per side depending on how you like it done. Drizzle remaining marinade on the steak as it cooks. When finished, cut the steak one way along the score lines. Then lay the slice on its side and cut the slice in half lengthwise to make thin strips. Cover and keep warm until ready to build your tacos. Assemble the tacos any way you like or let everyone make their own. Serve with taco sauce, salsa, sour cream or any other condiment of your choice.

    INGREDIENTS:


    1 cup tequila


    1 cup Worcestershire sauce


    1 cup teriyaki sauce


    1 dried jalapeno pepper, seeded


    1/4 teaspoon black pepper


    1/4 teaspoon salt





    DIRECTIONS:


    In a blender, combine tequila, Worcestershire sauce, teriyaki sauce, dried pepper, black pepper and salt. Blend until smooth. Pour over your favorite cut of meat and marinate for 8 to 24 hours.
    Season your flank steak strips with a mixture of kosher salt, fresh ground pepper, garlic powder or minced garlic, red pepper flakes, cumin, chili powder and onion salt. Go easy on the red pepper flakes! Toss in olive oil so that the rub sticks and let marinate for a few hours.
    umm!cook it in a skillet with some italian dressing.it is delicious!

    Pour the beer on and let it stand about five minutes.

    In a pan, crumble and brown ground beef. Drain and add seasoning according to directions on packet. Heat and set aside.


    Heat taco shells and tortillas according to directions. Layer with tomato, lettuce, olives, cheese,sour cream and salsa.

The Best grilled streaks are grilled on high, searing in all of the natural juices and handled with love and care, the rest is timing and experience or a finely tuned kitchen timer. As for the seasonings, add what you like, it's the technique that you love..........fire grilled, smoking chips, seasoned grill, quality cuts of beef with an aging process, and the knowledge of the Beef that you have.     I know you just love your steak by some of the little things you said %26amp; i bet you are one of these guys that love the blood dripping but uh uh not me, i like mine well done %26amp; if i grill its tough as hell but when i fry with no oil %26amp; seal well each side %26amp; then cook fairly slow its so tender %26amp; then the pan is brown %26amp; just right for a lovely gravyLadies....     Hun, I've been grilling the steaks at barbies for my mates more often than you've had hot dinners.
    omg thats sooo wierd, me and my mom cooked our first steak today on the grill for my gpa but neither of us knew wut we were doing, but she said it tasted fine once it was cooked, so i guess i do, but i dont like steak anyway
