How to cook steak the best? on the grill of course med rare!!?

I'm going with the assumption that your steak is about 1.5 in. thick.





Step 1- take your steak out of the refrigerator %26amp; let it sit at room temp for 1/2 - 1 hour. Don't be concerned with this step as bacteria only affects the ouside of the steak %26amp; we're gonna salt the meat liberally at this time.





Step 2 - pre-heat your grill to the hottest setting on all burners (if using gas). Cover %26amp; let it heat for 5-10 minutes.





Step 3 - oil your grill (Do NOT oil the steak). Just put some oil on a paper towel, use your tongs to oil grates your grill - vegetable oil works fine, canola oil is best.





Step 4 - grill your steak 4 minutes on each side (I know this sound like it's gonna be rare, but trust me on this). I like to put my steak at a 45 degree angle for 2 minutes %26amp; then turn 90 degrees for another 2 minutes. This gives your steak that cool criss cross char marks, but your choice on that.





Step 5 - this is a biggie!! Lightly wrap your steak in aluminum foil for 5 minutes. This does 2 things: first it allows the juices to redistribute back thru the meat so you don't cut into it %26amp; have a big puddle of juice all over your plate %26amp; a dried out piece of meat (that you just spent a small fortune on). Secondly, wrapping it in foil allows the meat to finish ';cooking'; to medium rare as there is a lot of residual heat in your steak. Many people are unaware of this step, but to quote Alton Brown ';Your patience will be rewarded';.

Soak that steak in Italian dressing (whole bottle, in a bowl covered with plastic wrap) for an hour or more before cooking.

get a good cut like ribeye, then marinate simple with olive oil, balsamic vinegar, fresh minced garlic, fresh rosemary, then grill to med. rare or medium, anything over that is not worth eating steak
